Vellutata Nettle Vegan Soup
The spring is in the air and therefore also the nettles are growing with all amazing nutrients in the wood, it's time to make Nettle soup! This recipe is my workhorse when I run my chef camps with kids with nettle soup I play safe, it's very easy and I don't have to fight with my children about food for dinner, happily they eat my nettle soup and they ask for more 😉 Besides the best part is when all of us we start going to pick nettle in the wood we do really go on a mission 😉 Nettles leaves are simply amazing...I would say that is a super food, Nettles are full of vibrant nutrients like iron, vitamin C, calcium, vitaminB, are packed in antioxidants...and all this nutrients are freely within reach for us, what are you waiting then? 🙂

Instructions
  1. Rinse very well the wild nettles and set aside.
  2. In a soup pot add the sliced leek and chopped onion, garlic and a small piece of chilli pepper or (Serrano pepper), be careful if you have kids for dinner.
  3. Add extra virgin olive oil and make the saute' when it gets a gold colour, saute' is ready, add the chopped and cleaned veggies, carrot, potatoes, fresh tomatoes, courgette, red lentils, sea salt and cover with water.
  4. As soon as the water boil, cook over medium heat with the lid. When the soup is almost ready, add the Nettles leaves. Cook for five more minutes. With a hand blender smooth your soup and serve with olive oil, sprinkle some nutrition yeast if you like or more chilli pepper 🙂 Yum! Buon Appetito !
  5. It would be better to consume the soup the day you made it, 'cause the vegetables after a few hours lose their nutrients and begin to ferment.
