Instructions
  1. Into a food processor place: oats flakes, and flaxseeds. Blend at a normal speed for a few minutes, until they turn into dust.
  2. The result has to be a kind of ground flour not very fine and not too course. Transfer in a bowl and add ground almonds, sea salt, vanilla extract, coconut oil, the juice and the zest of 1/2 of a small organic orange and brown sugar . Mix with one hand for less than a minute.
  3. Spred with some coconut oil all the surface and sides of a ceramic pie dish of 22/24 cm, press down your dough and bake at 180 degrees for 20 minutes until becomes gold.
  4. While the tart's crust base is backing, peel and dice the apples, in a bowl add the dark sugar and the cinnamon and set aside.
  5. In the meanwhile in a still pot add lemon zest, corn flour, sugar, turmeric and sea salt, beat the ingredients with the whisk and add the milk slowly, transfer on the hob at medium temperature stir until your mixture get thicker. It will take around 1- 2 minutes.
  6. Put the vegan custard cream on the side to cool. The twenty minutes have passed and your crust is ready, pour on the crust your apples mixed with sugar and cinnamon and cover with tin foil. It will help to cook faster the apples. Back again in the oven for 25 minutes at 190 degrees. Back in the oven for 5 minutes. Let it set for 30 minutes and dust with powder sugar or more fresh lemon zest.
  7. The tart is ready! Let it cool down a bit and then pour all over your vegan custard. You can serve this tart cold or warm...we like it in every way!! Enjoy! 🙂

This vegan apple tart is so easy to make! I made up this recipe in order of not using regular flour, and to increase the benefits from flaxseeds and oats flax, and of course ground almond and coconut and some brown sugar made the job! 😉 I didn't have to struggle with this recipe! Because turned very good at my first attemp! and even my family, that sometimes are suspicious, they simply loved it! My Spanish student Carlota, she enjoyed so much, that every Wednesday night she comes over with my daughter, to my Healthy Cooking Class and she make it! It is really easy to make, also a child can make it! Btw, at the moment, we are buying up this really good and crunchy tart! My son said he prefers her to all the ones I did before, and even to the ones he ate in Italy made by his grandmother Lucia, and that says a lot! Worth to try 😉 Buon Appetito!
