Tomato Vegan Soup
This soup is not for everyone, I like it a lot, but my kids not really, they don't really appreciate the green pepper flavour, instead I like it! Fresh tomatoes are so good in the soup, you could use instead, the tomatoes can, but for sure the result won't be the same! Anyway, I think this recipe has a sharp unique taste, what I really like and I would push you to try is the raw white chopped onion on the top...Yum!

Instructions
  1. In a soup pot add the sliced leek and chopped onion, garlic and a small piece of chilli pepper or (Serrano pepper), be careful if you have kids for dinner.
  2. Add extra virgin olive oil and make the saute' when it gets a gold colour, saute' is ready, add the chopped and cleaned veggies, carrot, potato, fresh tomatoes, green pepper, red lentils, sea salt and cover with water.
  3. As soon as the water boil, cook over medium heat with the lid for 15- 20 minutes. When the soup is cooked, with a hand blender smooth your tomato vegan soup and serve with olive oil, sprinkle on the top some nutrition yeast, chia seeds and chopped white onion if you like or more chilli pepper 🙂 Yum! Buon Appetito !
  4. It would be better to consume the soup the day you made it, 'cause the vegetables after a few hours lose their nutrients and begin to ferment.
