St Ptrick's Day Chia Seed Pudding
This is a celebration recipe, and with this ingredients, you can make 4 glasses of St. Patrick's Day Chia Seed Pudding, have fun with this recipe, involve your children, will be amusing to transform your pudding in an Irish flag, my daughter was thrilled...she loved it! 🙂 Happy St Patrick's day! Nowaday chia seed pudding grew in popularity, 'cause it's simply delicious and extremely healthy, a combination that has unleashed its popularity. Chia seeds are rich in micro and macro nutrients in that they contain, proteins, carbohydrates and lipids, vitamins, vegetable fibres, minerals and antioxidants. Chia pudding is part of my family lifestyle, I have it always in the fridge, besides is really versatile, sometimes I eat it in the morning or in the afternoon or as a treat when kids go to bed in the night. If you are still not been won over by this fantastic pudding there is nothing left to try, I usually use my homemade coconut milk but also almond or soy milk will give 'a great result !! Yum 🙂 🙂

  1. The night before or at least 5 hours before you need, place in a bowl 8 tbsp of chia seeds and 1 cup of dairy free milk, stir gently and let set all the night in the fridge. Soak cashews as well in a separate bowl.
GREEN LAYER
  1. Drain cashews and with half of them add it to the blender with a tsp of Spirulina powder and 1 banana and half of your dates and half lemon juice plus few drops of rose water. Blitz and pour over in your 4 transparent glasses the green mixture and level with a tsp.
WHITE LAYER
  1. With your gluey chia seeds mixture make the second layer, the white one, level always with a tsp.
ORANGE LAYER
  1. Now with the rest of the cashews add them to the blender with 1 carrot and 1 banana and the rest of the dates and half lemon juice plus a few drops of rose water. Grate the second carrot in a bowl and with your hands squeeze the grated carrot in order to have the carrot juice, add the juice to the blender and blitz until you get an orange smoothie cream.
  2. Pour over the carrot mixture and level, sprinkle on the top some grated carrots and if you like drizzle every glass with maple syrup. Happy St Patrick's Day! 🙂
