This is a cheese with a very strong Italian flavour, you can touch up the recipe as you prefer...but a very interesting advice is: do not swap black olives with green olives...it won't really work!!

  1. Soak cashews nuts for at least 4 hours.
  2. In a blender place the garlic, olive oil, oregano, stoned olives, cayenne pepper, salt, tomatoe and the lemon juice.
  3. Pulse, or gently blend for a few seconds. Add the drained cashews and blend it again.
  4. At this stage your cheese is ready! Now is the moment to taste and adjust as you prefer.
Recipe Notes

The beauty of this vegan raw cheese is that you can adjust your recipe as you prefer, just tasting from the blender and deciding if you want it smoother or more spicier. Adding more oregano and lemon juice will give to your cheese more creaminess and will add a strong touch of Mediterranean style!!
