Raw Banoffee Pie

Instructions
METHOD
  1. For the base: in a food processor or in a blender place the macadamia nuts, soaked and drained, cashews, flax seeds, salt and blitz them.
  2. Add  the dates and blend until the mixture forms a sticky dough.
  3. Press the mixture down firmly in a pie dish  ( 24 - 26 cm ).
  4. For the filling: place all the ingredients in the blender and blend it for a little while.
  5. Pour on the base the filling. Now slice the bananas on the filling.
  6. For the frosting: In the blender pour inside 2 cans of coconut milk ( only the solid part don't add the watery part of the can) add maple syrup and pulse for few seconds.
  7. Pour the frosting on the bananas layer and then dust with cinnamon or grated dark chocolate.
  8. Place the pie in the fridge at least 2-3 hours before serving. Last 4-5 days in the fridge, if you like you can freeze it. Buon appetito!!
TIPS
  1. TIPS: If you check my videos you can see that I made my Banoffee pie using only my blender, it's more difficult...with the food processor it's easier. Don't forget to place for 4 hours in the freezer coconut milk cans. This pie for me probably it's too sweet, I would add fewer dates, anyway, all my friends and family thought was perfectly delicious 🙂
