Mango Chia Seed Pudding
Saturday night I had some friends for dinner, they are not vegan, however, they are very healthy and their kids are used to try any food, therefore I made up a Mango Chia Seed Pudding....They simply loved it!! I made also a raw sesame seed bar (more on the kid's side) but ...they preferred my mango pudding! Nowaday chia seed pudding grew in popularity, 'cause it's simply delicious and extremely healthy, a combination that has unleashed its popularity. Chia seeds are rich in micro and macro nutrients in that they contain, proteins, carbohydrates and lipids, vitamins, vegetable fibres, minerals and antioxidants. Chia pudding is part of my family lifestyle, I have it always in the fridge, besides is really versatile, sometimes I eat it in the morning or in the afternoon or as a treat when kids go to bed in the night. If you are still not been won over by this fantastic pudding there is nothing left to try, I usually use my coconut milk but also almond milk or soy will give 'a great result !! Yum 🙂 🙂

  1. The night before or at least 5 hours before you need, place in a bowl 6 tbsp of chia seeds and 1 cup of dairy free milk, stir gently and let set all the night in the fridge. Soak cashews as well in a separate bowl.
  2. Slice banana and kiwi and, arrange them around your cup dessert. In the centre pour over the mixture obtained from gelatinous chia seeds with coconut milk.
  3. Peel mango, slice it and add it to your blender, drain cashews and add them to the blender. Blitz until you get a super yummy smooth thick cream, pour this mango cream all over your dessert bowl 🙂 Use any top! I think with passion fruit is a fantastic combination! if you have a strong sweet tooth you can drizzle with some maple syrup. Extremely easy and very satisfying! 🙂
  4. You can keep it in the fridge for 3-4 days...but I'm sure it won't last so long 😉 I used big dessert coppa: cm 17 diameter x 5 cm high, if you prefer you can arrange 4 small dessert bowl in the same way.
