Lentil & Walnut Pate'
I simply love this pate', a month ago I was invited to a raw- vegan party, the buffet' was full of tasty amazing dishes, but I've been hooked from a lentil pate' made from a hectic vegan lady Vicky McGlennon Phelan, who run a newsworthy website http://www.thehecticvegan.com Here my version of her superb green lentils and walnuts recipe. My recipe It's a must in my house lately, I always have in my fridge Lentil & Walnut pate' to spread on the toast, for the lunch of my children in the sandwiches, it's really easy to make and you can use it to accompany hot dishes like couscous, bulgur, millet, rice it only takes a spoon and your dishes will glow with their own light. Besides lentils and walnuts are a great protein combination! 🙂 Buon appetito

  1. Make a saute' with extra virgin olive oil, leek, onion, garlic, fresh chilli pepper, cumin seeds and berbere' spice. When saute' is gold add tomato paste oregano, basil, water and lentils and let it cook for at least 15 minutes.
  2. At this stage, you will see that the water is going to be absorbed, add some extra water if it needed. When lentils are cooked add the drained walnuts and let cook for five more minutes add salt and soy sauce.
  3. Your pate' is almost ready, with a hand blender blitz your mixture until you have a smooth paste. If you are not happy with the texture and you would prefer a thicker pate' let it cook a few minute more. Enjoy!!
Recipe Notes

I like to leave you this tip that in my opinion is pretty important to save time: Soak green lentils from the night before, you will cut down the time of cooking. 😉
