Lentil Curry Dip
If you like filling up your sandwich with hummus or healthy dip, this is your recipe! I made it last night for my family and today they had it on their sandwiches for lunch in school. Wow! my husband and my kids loved it and they preferred this recipe than Lentil & Walnut pate', probably because in this dip there is a big red pepper and they love peppers. I enjoyed both ;-)This healthy curry dip is really easy to make, really! in less than 20 minutes you can make a huge bowl of fresh homemade dip, rich in proteins. It lasts almost a week in the fridge, but of course, I'm sure it won't last more than 2 days ;-)...it's too good!! Besides it's very nice to have guest for dinner and to serve this dip with raw veggies...will be a great success 🙂 Buon appetito

  1. Make a saute' with extra virgin olive oil, leek, onion, garlic, fresh chilli pepper, cumin seeds and curry powder. When saute' is gold add tomato paste, chopped red pepper, fresh coriander, fresh basil, sea salt, water and lentils and let it cook for at least 15 minutes.
  2. At this stage, you will see that the water is going to be absorbed, add some extra water if it needed.
  3. Your dip is almost ready, with a hand blender blitz your mixture until you have a smooth paste. If you are not happy with the texture and you would prefer a thicker dip let it cook a few minute more. Enjoy!!
Recipe Notes

I like to leave you this tip that in my opinion is pretty important to save time: Soak green lentils from the night before, you will cut down the time of cooking. 😉
