Bella Charlotte Pie
This oriental style pie takes the name from my friend Charlotte who came back recently from her holidays in India. Two weeks ago she invited me for a special vegan dinner and voila'! after a fragrant dinner of different kinds of salads to a fantastic curry stew, here is the highlight of the evening!! A raw delicious pie made with pineapple and oriental spices, as you can imagine I have been completely kidnapped 🙂 Therefore I decided to follow roughly the recipe of my beautiful friend and add a bit of my touch 😉 The result was really good! I suggest you try it! It will be a guaranteed success!
  1. In a blender start to blend oats flakes, almonds, chia seeds, flax seeds and pink salt. Blend them up for a little while. Then pour this dusty mix into a bowl.
  2. In the same blender add the rest of the ingredients with exception of grated carrots that you will add later. Blend for a while until you have a sticky dough and then add it to the previous bowl.
  3. Mix all the ingredients together with your hands or a spatula and now add the finely grated carrots and keep mixing together.
  4. In a spring form of 22 cm press down the dough and place it in the fridge.
  5. Time to make the filling! In the same blender ( you don't need to wash it) place inside the drained cashews, 1 passion fruit,1 date, lemon juice and 1\4 cup of fresh mango plus 1\4 cup of raw coconut oil. BBlitz until you have a super creamy yummy filling 🙂
  6. Pour your filling on the top of your pie and decorate with some juice passion fruit or with tiny pieces of fresh mango!
  7. Set in the fridge for at least 5 hours before serving, last in the fridge for 4-5 days 🙂 YUM!! Buon Appetito!
