Yield: 4-6 serving

2 small onions

2  carrots

2 celery stalks

4 fresh tomatoes

1 leek

1 cup red lentils 

6 tbs extra virgin olive oil

1 or 2 tsp sea salt 

3 tbs tomatoes paste

2 handful chopped kale leaves

1 medium potato 

3 cups water 

  • In a pot saute’ leek and onions with olive oil till gold.
  • Chop the rest of the ingredients and it to the saute’, let it cook for around 20 minuts.
  • With a hand blender, if you prefer, smooth the soup and serve.
  • Enjoy ! Buon appetito!

TIP: You can use a pressure cooker and the timing will be halved. Don’t add any cube in your soup salt will give the right kick to your soup!
